In this class we will be learning step-by-step how to make your first sourdough loaf. It´s an all-day class because it needs to be! You need to see and feel and participate in each step so that you leave class feeling confident that you can replicate the recipe in your own kitchen.
During class we will cover the whole process of bread making…
—starter maintenance
—initiating a levain (the young starter used for this batch)
—mixing and autolyze
—bulk fermentation and stretch and folds
—overnight retard for greater digestibility
—baking and cooling
During our small, intimate class you will be able to ask questions and participate in the process!

Herbal medicine 101
This class is for anyone who wants to learn about the art and science of making herbal tinctures and elixirs.
Beginners are welcome! You do not need ANY herbal knowledge to come to this class. I promise you will get A LOT out of this.
This is a class that includes both theory and practice. Understand the WHY behind tincture making. What kind of herbs can you use to make tinctures and elixirs? How do you know how much to use? What kind of distilled alcohol is best? How strong should it be? How long do I let it sit? When do I strain? What are the dosages for different herbs? How do I know which herbs is for which ailment? Are there tinctures I can take daily?
etc. etc. etc.
ALL of your questions will be answered in this class!
You will also be making your own herbal tincture to bring home and strain for your use.

Sourdough for Beginners PART ONE

This 3 hour class is a stand-alone class.
Snacks provided :)
You can come just for part one OR you can come for part one and part two. You will need to add part two to your cart if you also want to participate in the next weekend´s class.
Sourdough for beginners is truly for absolute beginners. You do not need to know ANYTHING about sourdough to. come.
PART ONE:
We will begin our class with a little theory on sourdough…what makes it different than regular, unfermented bread? Is all sourdough actually sour tasting? Can someone with a gluten sensitivity eat sourdough and be okay? What are digestive health benefits of consuming sourdough products?
After that, we will focus on the sourdough starter. How to care for the starter. How to feed her. How to let her rest if you go on a trip. How to maintain the starter if you bake a lot of bread or just want to bake once a month.
You will go home with a jar of your own sourdough starter to use!
We will also be making sourdough bagels together and sourdough chocolate chip cookies.
All of this information is VERY IMPORTANT to understand BEFORE you actually bake bread.
Once you have the hang of the starter routine, you are ready to graduate to sourdough loaves (part two).
Herbs, ferments and bone broth for GUT HEALTH

In this 3 hour class we will be covering the anatomy and physiology of the digestive tract and how to support its optimal function.

We will also be making bone broth together, a deeply nourishing ancestral food that can help heal the gut lining.
Digestive friendly snacks and herbal teas will be provided.
And you´ll go home with a jar of your very own sauerkraut.
